Potato storage
We store potatoes for third parties as well as for our own crop, in the natural stores cut into the volcanic tuff of Cappadocia. Rock at this depth holds a steady temperature through the year without refrigeration, which suits seed particularly well: the tubers stay dormant, they do not sweat, and there is no compressor to fail in August.
